Potatoes are typically grated only in the amount needed for that meal or for that day. Therefore, one may grate potatoes on Yom Tov.
Horseradish, however, is often grated for use over multiple days rather than just a single meal or day. Therefore, one may not grate horseradish on Yom Tov.
Cheese is generally grated only in the amount needed for that day. However, since grated cheese tastes just as good when prepared before Yom Tov, one must employ a shinui when grating it. For example, one may hold the grater upside down or grate directly onto the counter instead of onto a plate.
